I think that the hardest part about being gluten free, dairy free and sugar free is coming up with foods to eat for breakfast. That is why I was so excited when I came across a recipe for gluten & dairy free muffins! The muffins were alright but I threw in my own little twist that makes them perfect!
First thing I did was grind up almonds in my blendtec and made almond flour with it.
Lemon Almond Muffins:
1 1/2 cup almond flour
1/4 cup pure maple syrup
1 tsp vanilla
1/4 tsp real salt
3 organic eggs
zest of 1 lemon
2 tsp lemon juice
Mix all ingredients together until smooth, pour batter until 1/2 of the muffin tin is full. Bake at 375 for 11 minutes or until muffins are golden brown.
