Raw Key Lime Pie

The more healthy that I eat, the more I want to eat healthy. But every once in a while it's nice to have a guilt free dessert - I think that it is good to get a little treat now and then - that way I don't feel like I am depriving myself. This raw pie is divine.

Nut Crust:
2 Cups raw unsalted cashews
1/8 tsp sea salt (real salt)
zest of 1 lime
6-8 Medjool dates

Mix all of the ingredients together in a food processor until it crust becomes a sticky, chunky dough. Press crust down onto parchment paper.

The Filling:
3/4 cup fresh squeezed lime juice (4 limes)
1 cup hydrated cashews
1 Tbs gelatin
zest of 1 lime
1 ripe avacado
1/4 cup raw honey
5 drops stevia
1 pinch sea salt (real salt)
2 Tbs xylitol
1 tsp vanilla extract


Blend all ingredients until creamy and smooth. Pour over raw crust and place in the freezer for atleast 3 hours. Take out 15 minutes before serving.
