Ingredients:
2 zucchini
6 small/ medium potatoes
1 liter chicken broth
1 yellow onion
salt & pepper mixture
celery salt
Sautee the zucchini & onion together in a little bit of olive oil. At the same time boil the peeled and cubed potatoes in the chicken broth. When the zucchini and onions are tender add the mixture to the potatoes. Cook together for 5 minutes so that the flavors have time to blend together. Transfer to a blender and pulse until smooth. Add salt, pepper and celery salt to taste. [Next time I am going to saute celery with the zucchini and the onions in place of using the celery salt.]
